Happy days are here again, mango maniacs! The season of your favourite juicy, sweet and absolutely divine fruit has arrived, where you can have all varieties and recipes of mangoes!!
Who doesn’t like to take a bite into succulent and pulpy fully ripe mango! We take you on a gastronomic journey to check out the various mango recipes available.

Take the pulp out of the mangoes and blend in a blender with sugar to taste and a little bit of salt. Now take a plastic sheet and spread the pulp on to it. Keep this on a chatai (mat) and dry it out in the sun. When the top is dried, turn and dry some more till no moisture is left. Full recipe here.

11. Aamras Poli

Aamras Recipe – Nothing but flavored mango pulp. Usually served with puffed puris known as aamras puri.We got our first mangoes in season. And the first thing I made is aamras and poori. 12. Mango Jam

Boil, steam, or microwave the whole mangoes until soft. Cool, then remove the peel and inner seed; place the mango pulp in a large bowl. Use a fork or potato masher to mash the pulp well. 13. Mango Chutney

In a large saucepan combine vinegar, white sugar, brown sugar, cinnamon, ground ginger, allspice, cloves, nutmeg, chile peppers and salt. Bring to a boil; boil for 1/2 hour. Stir in onions, garlic, golden raisins, raisins and ginger and boil for another 1/2 hour. Read here
14. Mango Curry

Heat the oil and add the remaining mustard seeds. When they sputter, add the curry leaves, turmeric and asafetida, if using. Add the mangoes and the ground coconut milk paste. Add a cup of water and stir the jaggery or sugar. Read full recipe.

Whisk the yogurt until it is smooth. Next add the grated raw mango, salt, chilli powder and roasted cumin powder to it and mix well. Check the salt and seasoning and adjust to suit your taste. Set the raita aside while you prepare to season it. Read here.

Heat the oil in a large pot over medium-high heat. Stir in the curry paste, and cook until fragrant, about 1 minute. 18. Prawn Mango Curry

Grind grated coconut, turmeric powder, tamarind, peppercorns, coriander and red chillies. Add 1/4 cup water, prawns and raw mango pieces in an aluminum bowl. 19. Mango Shrikhand

20. Mango Payasam

21. Mango Kulfi

26. Coconut-Mango Frozen Yogurt

In a blender or food processor, puree the diced mango with 2 tablespoons of the sugar syrup. Transfer 1/4 cup of the puree to a bowl and whisk in the Greek yogurt, coconut milk, lemon juice and the remaining sugar syrup. Remove peel and white pith from oranges. Working over a medium bowl to catch juices and using a small sharp knife, cut between membranes to release orange segments into bowl.
